Ingredients

3 lbs. Italian TomatoesPeeled and cut into 1/8.

3⁄4 c. OnionChopped

2 Cloves GarlicCrushed

1⁄2 t. BasilDried

1⁄2 t. OreganoDried

1⁄2 t. Sugar

2 t. Salt

1 dash PepperOptional
Directions
In large saucepan, mix all ingredients. Bring to boiling over medium heat, stirring until tomatoes are slightly juicy. Reduce heat, simmer covered for 1 hour. Fill sterilized quart jar. If the mixture does not come to within one inch of top add boiling water. Seal according to lid directions. Process in water bath 15 minutes. Remove to cooling rack. Cool 2 hours, check seal, label and store in cool, dry place. Makes 1 quart.
