5 lbs Ground BeefCheapest and greasiest you can buy

1⁄4 c. Curing Salt

2 T. Liquid Smoke

1 1⁄2 t. Garlic Powder

3 t. PepperCoarse black pepper (if you want peppercorns, use 1 1⁄2 t. coarse black pepper and 1 1⁄2 t. peppercorns)

1 T. Italian Seasoning
Directions
Put hamburger in large bowl. Mix seasonings together in a shaker bottle, all except liquid smoke. Sprinkle seasonings over hamburger, about a at a time and mix with your hands. Put liquid smoke in last and mix well. Cover and refrigerate 24 hours. Mix well. Cover and refrigerate 24 more hours. Shape into logs, tie in nylon net and cook in 150° oven for 8 hours. Remove from oven and remove net. Wrap in aluminum foil and store in freezer.
Note: When cooking be sure to put in something the grease can drip off of, don’t let it set in its own grease.
