2 c. Flour

Beat eggs until very fluffy (about 8 minutes). Beat in water and salt. Stir in flour, working with hands if necessary. Roll dough out on well floured cloth. Knead slightly until not sticky, but still soft. Divide dough into 12 equal portions. Roll each portion out on floured cloth to approximately 8 inch circles (very thin). Heat liquid cooking oil to 375 degrees in a heavy skillet (about 1 inch deep in skillet.)

Gently place one circle of dough at a time in hot oil, frying only about 10-15 seconds per side. When turning, and removing, use tongs and be very careful as they break easily. They should not be brown, but a golden yellow when removed. Place confectioners’ sugar in small strainer and gently sprinkle on both sides of elephant ears. They may be drained first on paper towels, if desired.
