Ingredients

4 large Potato
1 lb. Bacon Cooked crisp and crumbled
2/3 c. Butter
½ Onion Chopped
½ c, Flour
1 qt. Half-and-half
1 pt. Milk
to taste Salt
to taste Pepper
to taste Garlic Powder
8 oz. Velveeta Cheese Cut into small pieces
1 c. Sour Cream

Bake potatoes until tender, cool. Cook bacon a set aside. Melt butter in saucepan and saute onions. Slowly add flour with a wire whisk until thoroughly blended. Gradually add half and half and milk, whisking constantly. Add salt, pepper, and garlic. Simmer over low heat until thickened.

Cut potatoes in half, scoop out the meat and set aside. Chop half the potato peels and discard the rest. Whisk in the potatoes and peels. Add bacon. Add Velveeta Cheese a little at a time,stirring until melted. Add sour cream.
