2 t. Baking Powder

2 c. Flour
Directions
Beat egg. Add 1⁄4 c. water. Sift flour and baking powder and add to mixture. Add remaining
water.
Prepare jumbo shrimp: Take off shell then slit back and remove the vein. Leave the tail on.
Flatten shrimp with flat side of knife. Hold by tail and dip into batter, then fry in deep fat until
golden brown. Drain on absorbent paper.
