2 c. ChickenShredded, cooked

1 pkg. Taco Seasoning

3⁄4 c. Water

16 oz. can Refried Beans

6 lrg. Flour Tortillas

1 1⁄2 c. Monterrey Jack CheeseGrated

1⁄4 c. PimentosChopped

1⁄4 c. Green OnionChopped

1⁄4 c. CilantroChopped (optional)

Directions
In medium skillet, combine chicken, taco seasoning and water. Bring to a boil; reduce heat and simmer, uncovered 15 minutes. Stir in beans. On 1⁄2 of tortilla spread approximately a cup of mixture. Layer with cheese, pimento, onions, cilantro on top and fold tortilla in half. Heat oil in skillet and quickly fry tortilla on each side until slightly crisp. Makes 6 servings. You may serve with salsa, sour cream guacamole, etc. (I use tuna in place of chicken also.)
