Make the DressingIn a blender/food processor, combine the red wine vinegar, Splenda, salt, ground mustard, and raspberries. Blend until smooth. Add in the oil slowly while pulsing the mixture until well combined. Stir in the poppy seeds. |

Bring it all TogetherToss together all of the salad ingredients. Drizzle with dressing. |

Go easy on the cranberries/raspberries for a lower carb version. If you’re not worried about carbs, this makes an excellent wrap also.
