Directions
Mash 1 1⁄2 cups sliced strawberries with a potato masher or fork. Beat cream and sugar in a medium bowl with electric mixer until stiff peaks from when beaters are lifted. Reserve 1⁄2 c. for garnish. Fold mashed berries into remaining cream. Unroll cake, fill with strawberry cream and reroll. Transfer to serving platter. Garnish with reserved cream and remaining berries. May be refrigerated up to 1 hour. Makes 8 servings.
