Divinity (makes 8 centers)

3 c. sugar

1 c. light Karo

1⁄2 c. water

2 egg whites

Cook in covered pan for 5 minutes. Wipe side of pan and cook uncovered until syrup reaches 250°. Pour half of it over 2 stiffly beaten egg whites. Cook remaining syrup 1 more minute and add to egg mixture. Continue beating until gloss leaves and goes stiff. Spoon onto wax paper into 8 spoonfuls and roll into logs. Freeze until ready to use.

Caramels (covers 16 centers)

1 can sweetened condensed milk

2 c. brown sugar

1 c. light Karo syrup

a lb. butter (not margarine)

2 to 2 1⁄2 lbs. chopped pecans

Cook stirring constantly until 240°. Drop onto plates covered with chopped pecan nuts. If nuts are cold, they will adhere better. With hands quickly press nuts into roll. Put on wax paper to cool. Do not over roll, it is not necessary. Enough nuts will adhere immediately. Have nuts cut fairly large. Wrap with plastic wrap and freeze until ready to serve.
